    1. Beat eggs together first. Blend all ingredients together. Pour by spoonfuls onto hot griddle. Flip pancake over when slightly browned. Serve with organic butter and fruit.

    1. Set oven at 350.
    2. Grease an 8x8-inch baking pan with butter or coconut oil.
    3. Keep warm in the oven.
    4. Mix the cornmeal, sugar, flour, baking powder, baking soda, and salt in a bowl.
    5. Whisk together the buttermilk, eggs, vanilla, and melted butter in another bowl.
    6. Pour the wet ingredients into the dry and give them a good stir, just til moistened.
    7. Pull the hot greased pan from the oven and pour in the batter.
    8. Bake for about 25 to 30 minutes, or until a toothpick inserted in the middle comes out clean.
    9. When done, take the corn bread out of the oven and brush the top with honey.
    10. Cool slightly before cutting into squares.
    11. Enjoy with butter and honey and your favorite chili!
  • Coconut Chocolate Cubes

    1. Melt the coconut oil slowly in a glass bowl sitting inside a pot of almost boiling water so that the water level is about half way up the bowl.
    2. Add vanilla and whisk or beat with a fork until thoroughly combined.
    3. In a separate bowl, mix the cinnamon and salt into the chocolate powder.
    4. Then add the dry ingredients into the warm bowl of coconut oil with vanilla, and whisk until the mixture is completely smooth.
    5. Mix in the shredded coconut last.
    6. Spoon the mixture into a chilled ice tray, filling each section about 3/4 full.
    7. Place in the freezer for 15 minutes, then put into the fridge for fifteen more.
    8. Pop out the cubes and enjoy a few, and then store the rest in a glass container in the fridge for a healthy, dessert-like treat anytime! As an option, stick an almond or walnut into the cubes before putting into the freezer.
  • Homemade Granola

    1. Mix all ingredients together well and spread evenly on a cookie sheet.
    2. Bake at 325 for about 30 minutes, mixing occasionally to prevent burning.
    3. Allow to cool; stir again, and place in an airtight jar or container.
    4. Serve with yogurt and fresh fruit.
