    Asian Ginger Dressing

    1. In a small saucepan, combine all ingredients except cornstarch and water.
    2. Bring to a simmer.
    3. Cover and simmer for 10 minutes.
    4. Remove from heat.
    5. Using a slotted spoon, discard garlic.
    6. Dissolve cornstarch in water and stir into sauce.
    7. Simmer, stirring constantly, until sauce thickens slightly, about 2 minutes.
    8. Transfer to a small bowl; cover and refrigerate until thoroughly chilled.
    9. Use as a dipping sauce for Spring Rolls.
  • Black Bean Fiesta

    Black Bean Fiesta
    1. Cook beans as directed after soaking overnight, or used canned beans, drained well.
    2. Saute onions, garlic, celery, pepper in 1/2 cup water in large saucepan for 15 minutes or so, adding more water as needed.
    3. Stir in spices.
    4. Add black beans and chopped tomatoes, cover and simmer on low heat for 15-20 minutes.
    5. While bean mixture is simmering, remove stems from greens, rinse and chop into 1/4 inch strips.
    6. Bring greens and 1 cup water to boil in separate saucepan, cover and reduce heat to simmer til greens are wilted.
    7. Meanwhile, peel oranges.
    8. When beans are ready, toss with drained greens and soy sauce.
    9. Season with salt as needed.
    10. Serve with cooked rice and orange sections for garnish.
  • Lentil Soup

    Lentil Soup
    1. Rinse lentils, put in a large saucepan and add enough cold water just to cover.
    2. Boil for about 10 minutes, then add the remaining ingredients except for the spinach Reduce heat and simmer for 30 minutes until lentils are tender.
    3. Put a small handful of spinach in the bottom of each bowl and ladel the hot soup on top.
    4. To garnish, put a tablespoon of sour cream on top of soup. Enjoy!
